Directions

  1. 1. Quarter courgette lengthwise , then cut pcs in half crosswise.
  2. 2. Add in courgette to a medium saucepan of boiling salted boiling water and boil uncovered over high heat 3 min or possibly till just crisp-tender.
  3. 3. Drain well. Transfer to a shallow platter.
  4. 4. Heat oil in saucepan used to cook courgette, add in garlic and cook over low heat till light brown, about 15 seconds.
  5. 5. Add in coriander and stir over low heat a few seconds to blend.
  6. 6. Immediately add in to courgette and toss.
  7. 7. Season to taste with salt and cayenne pepper. Serve warm.
