  • 1/4 c. Margarine
  • 1/4 c. Sugar
  • 1 c. Flour
  • 2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1/2 c. Lowfat milk
  • 1 lb Can fruit, plums, gooseberries, peaches, cherries, etc.
  • 1/2 c. Sugar, extra if needed

Directions

  1. Cream margarine and 1/4 c. of the sugar. Add in flour, baking pwdr, salt, and lowfat milk and mix together. Pour into an 8" x 8" x 2" pan. (Use a glass pan for gooseberries). Spoon liquid removed fruit over the top and then pour the liquid removed fruit juice over everything. (If using plums, take out the pits first). If the fruit isn't sweet sufficient for you, sprinkle 1/4 - 1/2 c. of sugar on top. Bake at 350 degrees for 35 to 45 min.
  2. Double the recipe for a 9" x 13" pan.
  3. For fresh gooseberries: Before starting, cook the gooseberries. Use about 1 c. in 1/2 c. of water and sugar to taste (lots) till done. Try to end up with 1 c. juice after they have cooked. Cold first before using.
