Ingredients
- 4 lrg tomatoes minced
- 1 x Spanish onion minced
- 1 sm cucumber pared & minced
- 2 x green bell peppers minced
- 24 x mushrooms quartered
- 24 x black olives
- 1 c. Feta cheese
- 1/2 c. extra virgin olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. white wine vinegar
- 1 Tbsp. oregano leaves
- 1 tsp salt
- 1/2 tsp cracked black pepper
Directions
- In a large mixing bowl, combine the vegetables, olives and cheese.
- In a small mixing bowl, blend together the remaining ingredients. Pour over salad and toss to coat. Serve at once.
