Chocolate Volcano Cookies Recipe

Ingredients

  • 4 sqr , (4 ounce.) semi-sweet chocolate
  • 1/2 c. Shortening
  • 2 c. Sugar
  • 4 x Large eggs
  • 2 tsp Vanilla
  • 2 c. All-purpose flour
  • 2 tsp Baking pwdr
  • 1/4 tsp Salt Confectioner's sugar

Directions

  1. Preheat oven to 325 F.
  2. Heat chocolate and shortening in the top of a double boiler (or possibly in a mixing bowl set in a pan of very hot water).
  3. Add in the sugar. Add in the Large eggs one at a time, beating well after each one. Add in the vanilla.
  4. Mix the flour, baking pwdr, and salt. Add in the dry ingredients to the wet ingredients and stir to thoroughly incorporate.
  5. Refrigeratedough. Roll into small balls, and roll the balls in confectioner's sugar. Place them on a lightly greased cookie sheet and bake 10-12 min.
  6. Don't overbake.
  7. As they bake, the cookies will spread slightly and the tops will crack.
