Ingredients

  • 1 whole chicken breast, boned, skinned and diced
  • 1 tbsp. butter
  • 4 lg., hard, ripe tomatoes
  • 3/4 c. reg. wheat germ
  • 1/3 c. minced green onion
  • 1/3 c. minced green pepper
  • 3/4 teaspoon curry pwdr
  • 1/2 teaspoon thyme leaves, crushed
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Avocado wedges, ripe olives, lettuce

Directions

  1. Saute/fry chicken in butter till tender, about 5 min. Cut thin slices from top of tomatoes. Scoop out pulp, leaving shells intact. Dice tomato tops and pulp. Drain. Combine all ingredients except tomato shells, avocado, olives and lettuce.
  2. Mix well. Spoon mix into shells. Serve on lettuce garnished with avocado wedges and ripe olives, if you like. Makes 4 servings.
