Ingredients

  • 2 large beetroot, scrubbed
  • 2tsp olive oil plus extra for roasting the beets
  • 2 medium skinless, boneless chicken breast, cut in half lengthways
  • Old Bay seasoning (or salt and pepper)
  • 50g sliced closed cup mushrooms
  • 1 shallot, finely chopped
  • 75ml chicken stock
  • 50 ml Marsala (or similar sweet) wine
  • 50 ml double cream
