Ingredients

  • 1 ounce Cascabel chile peppers, stemmed, seeded, or possibly use mirasol or possibly guajillo
  • 6 ounce Dry cherries, stemmed, seeded
  • 1 x Lemon, juiced
  • 1 x Orange, juiced
  • 1 Tbsp. Honey
  • 1/2 c. Water

Directions

  2. Put everything in a pan, bring to boil, reduce heat to a simmer. Cook for 10 minutes, or possibly till reduced by 1/2. Remove from heat, let cold slightly, then puree in a blender or possibly food processor. Strain thru sieve, reheat over low heat before serving.
  3. Makes about 1 c..
  4. I served this over poached salmon that turned out pretty well: I poached the salmon in water with one each lemon, lime and orange halved and added when boiling, then add in the salmon and cook till just done.
