Ingredients

  • 3 c. pitted cherries washed berries, or possibly peeled and sliced peaches, plums, apricots, apples, bananas, etc.
  • 3 lrg Large eggs
  • 1 1/4 c. lowfat milk
  • 1 tsp almond or possibly vanilla extract
  • 2/3 c. granulated sugar
  • 3/4 c. King Arthur Unbleached All-Purpose Flour

Directions

  1. Preheat the oven to 350F. Thoroughly grease a 9-inch pan.
  2. With a mixer, beat the Large eggs till foamy. Beat in the lowfat milk and the extract. Add in the sugar and beat till it's well incorporated. Add in the flour slowly, beating well after each addition to break up any lumps.
  3. Place the fruit in the prepared dish and pour the custard batter over it. Bake for 45 min. A cake tester inserted into the center should come out clean. Serve hot or possibly at room temperature.
  4. Yield: 8 slices
  5. NOTES : This relatively quick and oh-so-simple summer dessert is basically a flan which can showcase any number of summer fruits. You can use mixtures, such as blueberries and peaches, strawberries and bananas, plums and apricots, or possibly stick with just one type of fruit.
