  • 2 cups cooked quinoa - You can easily make your quinoa a few days in advance
  • 2 large eggs, whisked
  • 1 1/2 cup shredded carrot
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup grated Cabot Catamount Hills Cheese
  • 2 scallions, diced
  • 2 cloves garlic, minced
  • 2 Tbs Flaxseed Meal
  • 1/2 tsp. salt and pepper
