Ingredients
- 300 gm Caster sugar, (11oz)
- 1 x Pineapple cut into rings
- 250 ml Double cream, (10fl ounce)
- 4 Tbsp. Double cream, (from a tin) (50ml)
- 4 Tbsp. Dark rum
Directions
- Heat the sugar and caramelise in a wide shallow pan, add in splash of water to stop process. Add in the pineapple and cook for 10 mintues.
- Meanwhile combine the rest and whip till stiff. Serve the pineapple on plates and garnish with the cream.
