  1. Luscious and light, this pudding is easy to make and inexpensive. The Grand Marnier Sauce is marvelous. Double the recipe and chill the rest to use for something special.For 4 servings you will need:
  2. 1. In mixing bowl, beat large eggs well. Gradually add in sugar and continue beating.2. Add in lowfat milk, salt, raisins and 2 flavorings.
  3. 3. Pour mix over broken up French bread in 1 qt oval oven proof bowl which has been buttered.
  4. 4. Sprinkle top with nutmeg. Dot with butter.
  5. 5. Place bowl in a pan of warm water.
  6. 6. Bake at 375 degrees for 40-45 min till mix is well set. Test with knife or possibly cake tester.
  7. 7. Remove from oven. Allow to cool slightly. Top with meringue.
  8. 8. Bake about 7 min at 325 degrees till meringue is golden brown.
  9. 9. Serve pudding warm with Grand Marnier Sauce.
  10. Beat 2 egg whites till foamy. Add in 1/8 tsp salt. Beat till almost stiff. Gradually add in 4 tbsp sugar. Beat till stiff. Add in 1/2 tsp vanilla.
  11. In small saucepan, cook over medium heat 1/3 cup sugar, 1 tsp flour, 1/4 cup water, pinch of salt, dash of nutmeg and 1 tsp butter. Cook till dissolved. Cool. Add in 1 tbsp Grand Marnier.
