Directions

  1. In a non-stick saucepan, heat oil and add in vegetables.
  2. Cook, stirring, over medium heat about 5 min. In a small bowl, beat egg white with salt and pepper.
  3. Stir into saucepan. Stir in groats, then add in broth and bring to a boil. Reduce heat, cover and cook 10 min till tender. When liquid is absorbed, add in pine nuts and fluff with a fork. Garnish with parsley.
