Ingredients

  • 40 gm Medium oatmeal
  • 2 x Heaped tbsps butter
  • 1 tsp Baking pwdr
  • 1 x Beaten egg A healthy pinch of salt
  • 1/2 lb White flour
  • 1 1/3 lb Sugar
  • 2 Tbsp. Black treacle, (molasses)
  • 1/2 pt Buttermilk
  • 1 x Heaped tsp grnd ginger

Directions

  1. Mix oatmeal and flour thoroughly in large bowl.
  2. Rub in butter, add in the sugar, salt, ginger, baking pwdr, mix well.
  3. Heat treacle till hot, stir in beaten egg, half buttermilk.
  4. Stir mix into flour, adding buttermilk gradually.
  5. Stop when mix is soft sufficient to drop from a spoon.
  6. Amply grease a tin about 8 inches by 4 inches, add in mix.
  7. Bake in oven, 350 F (177 C), about 1-1/4 hrs or possibly till well risen.
  8. Test to ensure it is cooked in centre by inserting a thin skewer.
  9. Let cold for a few min before removing from tin.
  10. Cold on a rack; leave overnight if posslble to let it set.
  11. 'Bruni'; a thick bannock. The Scots have a taste for ginger and it appears in many cakes and biscuits (cookies).
