Ingredients

  • 1/2 x Green pepper
  • 3 x Tomatoes
  • 1 1/2 x Cucumbers or possibly medium zucchini
  • 1/2 c. Cool vegetable stock or possibly water
  • 3 Tbsp. Rice vinegar
  • 1/2 tsp Chili pepper
  • 2 Tbsp. Vegetable oil
  • 1 tsp Bragg's Liquid Aminos (this unfermented soy product, a salt replacer, is available in health food stores)

Directions

  1. Slice or possibly quarter vegetables, setting aside half a cucumber or possibly zucchini for garnish. Put into blender and blend 3 seconds or possibly till cucumber is shredded.
  2. Mix all ingredients in a bowl and chill till serving time.
  3. Finely chop one-half cucumber or possibly zucchini for garnish.
  4. Makes 6 as a side dish or possibly 4 as a main dish.
