  • 1 pkt (4-serving size) Jell-O brand gelatin, Blackberry flavor
  • 3/4 c. Boiling water
  • 1/2 c. Cool water Ice cubes
  • 4 ounce Cold Whip whipped topping, thawed Blackberries (optional) Mint leaves (optional)

Directions

  1. DISSOLVE gelatin in boiling water. Combine cool water and ice cubes to make 1 c.. Add in to gelatin, stirring till ice is melted. Place bowl in larger bowl of ice and water. Let stand, stirring occasionally, till gelatin is slightly thickened, about 5 min. Mix in whipped topping.
  2. SPOON gelatin mix into individual souffle c. with paper collars (see note below). Refrigeratetill hard, about 2 hrs. Remove collars. Garnish with Blackberries and mint leaves, if you like.
  3. MAKES 4 servings,
  4. Prep time: 20 min,
  5. Refrigeratetime: 2 hrs
  6. Note: To make collars, cut pcs of waxed paper or possibly foil long sufficient to wrap around dishes and overlap slightly; mix in half lengthwise. Wrap doubled paper around dish, extending about 1 inch above rim. Secure with tape.
