Ingredients

  • 2 lb Kolbasi, fresh or possibly smoked
  • 2 lrg Cans sauerkraut
  • 2 lrg Onions sm Salt pork piece Or possibly smoked bacon Salt and pepper, to taste
  • 2 Tbsp. Flour
  • 2 Tbsp. Bacon fat

Directions

  1. Bake kolbasi in 325 degree oven for 1 hour in pan with water to cover.
  2. Thoroughly rinse and drain sauerkraut. Place in pan with 2 whole onions and salt pork, add in salt and pepper to taste. Add in water to cover; simmer 45 min. When kolbasi is cooked, drain, cut into 4 inch pcs, add in to sauerkraut, and continue cooking for 30 min. Brown flour in bacon fat.
  3. When golden, add in to kolbasi and sauerkraut and mix thoroughly.
  4. Makes8 servings. This is a Polish recipe.
  5. Year's". Lynn's notes: Made this 9-15-97 and added 6 cloves garlic, sliced.
  6. Very good dish, good comfort food. Next time, I will not add in so much water to the sauerkraut- even with the flour mix, it was a bit soupy. Would be great for New Year's!
