  • 2 1/2 lb beets
  • 2 1/2 cup ACV (Apple cider vinegar)
  • 1/4 cup diced sweet onion
  • 1 teaspoon salt
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon groud black pepper

Directions

  1. Wash, peel and steam the beets until tender; 20-30 minutes.
  2. Saute' onions until caramelized.
  3. Add all ingredients to a blender or food processor and puree until smooth.
  4. Store in an airtight container. Serve chilled.
