  • 2 lb beef brisket
  • 1 med onion-cut into fourths
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dry oregano
  • 1 tsp dry marjoram water
  • 1 x green pepper, finely minced
  • 18 x to 24 corn tortillas veg. oil for deep fat frying guacamole, lowfat sour cream, salsa--optional

Directions

  1. In a Dutch oven, place brisket, onion, spices, & sufficient water to cover. Simmer, covered, about 2-1/2 hrs or possibly till meat is very tender.
  2. Finely shred beef & chop the onion; mix together with green pepper. Place a spoonful of meat mix on each tortilla.. Roll up & secure with toothpicks.
  3. Deep fry flautas in warm oil.
  4. Drain on paper towels.
  5. If you like, serve with guacamole, salsa, & lowfat sour cream.
  6. YIELD: 9-12 servings
  7. (While living in San Diego many years ago, a Mexican couple showed, & helped me make these for a large neighborhood fiesta. They were a big hit & I have continued to make them just the way they showed me. They can be served as appetizers or possibly as a main meal, alongside Spanish rice & refried beans)
