Directions

  1. Finely chop together the chillies, garlic and ginger. Then whisk with the olive and sesame oils, fish sauce, honey, lime zest and juice, and coriander in a large bowl. Taste for seasoning.
  2. Spray a large square of foil with oil, place the fish in the centre and smear the sauce over the top. Then tightly wrap up and cook for 10-12 mins on a preheated ridged grill or BBQ, checking if ready by making a small cut just below the head.
  3. Carefully transfer the fish to a plate with the juices sprinkled on top and serve with steamed rice on the side.
