Delicious baked salmon that has a very light and citrusy taste. Tastes great especially on a hot summer day when paired with rice pilaf or a mixed greens salad!!
Ingredients
- fresh salmon filets (allow about 1 per person)
- 1/3 cup orange juice
- 2 lemons
- salt
- pepper
- garlic powder
- Italian seasoning
- fresh cilantro for garnishing
Directions
- Preheat oven to 375 degrees
- Wash & place salmon filets skin side down into deep rectangular baking dish
- Mix 1/3 cup orange juice with the juice of one of the lemons, pour mixture over salmon filets in baking dish
- season each salmon filet with salt, pepper, garlic powder, and Italian seasoning to taste
- cut the second lemon in half, cut one half of lemon into slices and place slices on top of salmon filets
- (the second half of this lemon will be sliced and placed on salmon after it's done)
- Bake salmon filets for 15-25 minutes depending on the thickness
- After baking, place filets on serving dish and place slices from the second half of the lemon on top
