Ingredients

  • 1 ounce Butter
  • 1 lrg Onion, peeled and minced
  • 12 ounce Fresh or possibly frzn asparagus, minced
  • 4 ounce USA peanuts, minced Salt and freshly grnd black pepper
  • 5 sht filo pastry
  • 4 ounce Butter, melted
  • 5 ounce Vegetarian Cheddar cheese, grated

Directions

  1. 1. In a frying pan, heat the butter and saute/fry the onion for 3 min Add in the asparagus and peanuts and fry for a further 2 min. Remove from the heat and leave to cold. Add in seasoning to taste.
  2. 2. Unfold the sheets of filo pastry on a flat surface and brush each one liberally with butter then place them on top of one another to create layers.
  3. 3. Scatter the asparagus mix onto the pastry and sprinkle with 4oz /100 g of the cheese.
  4. 4. Carefully roll up the strudel lengthways and place on a baking tray. Brush with butter and sprinkle with the remaining cheese.
  5. 5. Place in a pre-heated oven at 200 C/400 F/gas mark 6 for about 25-30 min till crisp and golden brown. Serve either warm or possibly cool in slices.
