Ingredients

  • 4 lrg Lebanese cucumbers, cut in slices
  • 3 x Shallots, white part only, (3 To 4) sliced thinly
  • 1 Tbsp. White vinegar
  • 2 Tbsp. Sweet chilli sauce Fish sauce to taste A good handful of coriander leaves
  • 50 gm Crushed roasted peanuts

Directions

  1. Put the sliced cucumbers into a bowl with the shallots and sprinkle over the vinegar.
  2. Add in the sweet chilli sauce and fish sauce and toss the salad.
  3. Just before serving add in the coriander leaves and peanuts and toss again. Serve at once.
