Ingredients
- 4 lrg Lebanese cucumbers, cut in slices
- 3 x Shallots, white part only, (3 To 4) sliced thinly
- 1 Tbsp. White vinegar
- 2 Tbsp. Sweet chilli sauce Fish sauce to taste A good handful of coriander leaves
- 50 gm Crushed roasted peanuts
Directions
- Put the sliced cucumbers into a bowl with the shallots and sprinkle over the vinegar.
- Add in the sweet chilli sauce and fish sauce and toss the salad.
- Just before serving add in the coriander leaves and peanuts and toss again. Serve at once.
