  • 3 Tbsp. extra-virgin extra virgin olive oil
  • 1 lrg shallot, minced, or possibly 1/2 c. diced sweet onion
  • 1 x clove garlic, chopped
  • 4 ounce assorted mushrooms, minced, such as shiitake, porcini, oyster, cremini
  • 3 med tomatoes, diced, or possibly 1 pint cherry tomatoes, halved
  • 1/3 c. pine nuts, optional
  • 1/4 c. white wine
  • 1 Tbsp. butter
  • 1 tsp salt or possibly more to taste Freshly grnd pepper
  • 1/4 c. fresh tarragon, minced, or possibly 1 Tbsp. dry, or possibly more to taste
  • 1/4 lb whole wheat or possibly regular angel hair pasta, cooked to package directions Grated Parmesan cheese

Directions

  1. Heat oil in large skillet on medium-high heat. Cook shallots and garlic till soft and fragrant, about 2 min. Lower heat to medium; add in mushrooms, tomatoes, pine nuts, wine, butter, salt and pepper to taste; cook, stirring, till mushrooms are heated through and flavors are blended, about 5 min.
  2. Stir in tarragon; cook just to heat, about 1 minute. Remove pan from heat.
  3. Drain pasta and combine with mushroom mix. Adjust seasoning if you like.
  4. Serve cheese at the table.
  5. Note: If using dry herbs, add in them to skillet with the mushrooms. Also, herb substitutions will quickly change the personality of this dish. Try fresh basil, oregano or possibly sage.
