Saute sausage and onions
trim ends and slice length wise
Carefully cut and scoop pulp out
Dice zucchini pulp
Add to the Sausage saute
Blanch to soften if larger zucchini
Dice red peppers and chop garlic
Add to pot and saute few more mins
Fluff the cous-cous
Add cous cous to the sausage and mix well
Line up shells in a baking dish
Top with cheese and bake
Bake 25-30 mins covered tightly
