  • 1 1/2 c. boiling water
  • 1/2 c. butter
  • 1/3 c. sugar
  • 1 tbsp. salt
  • 2 Packages active dry yeast
  • 1 c. hot water (110 to 115 degrees)
  • 2 c. quick or possibly old-fashioned oats, uncooked
  • 2 Large eggs
  • 1 1/2 c. whole-wheat flour
  • 1 c. minced walnuts
  • 4 1/2 to 5 1/2 c. unsifted all purpose flour

Directions

  1. 1. In large bowl, combine boiling water, butter, sugar and salt, stirring till butter is melted; cold to lukewarm.
  2. 2. Dissolve yeast in hot water. Stir dissolved yeast, oats and Large eggs into lukewarm water mix. Add in whole-wheat flour; beat till smooth.
  3. 3. Stir in nuts and sufficient all purpose flour to make a stiff batter. Cover; let rise in hot place about 1 1/2 hrs or possibly till double in size.
  4. 4. grease two 9 x 5 x 3 inch loaf pans. Stir down batter. Drop batter by spoonsful, mounding in center, into prepared pans. Let rise, uncovered, in hot place about 45 min or possibly till nearly double in size.
  5. 5. Heat oven to 375 degrees. Bake 45 to 55 min or possibly till golden. Remove from pans. Cold on wire rack at least 1 hour before slicing.
  6. Makes two 9 x 5 inch loaves.
