Cornmeal waffles surround apples, ham and cheese to create the ultimate breakfast sandwich!!

Directions

  1. To make the waffles: Whisk flour, cornmeal, baking powder, baking soda.
  2. In another bowl mix yogurt, butter and maple syrup and egg yolks.
  3. Combine flour mixture with wet mixture.
  4. Beat egg whites, and fold into batter.
  5. Heat waffle iron.
  6. Spray with nonstick spray.
  7. Cook all your waffles.
  8. For the topping: Combine mustard and 2 tbsp. maple syrup.
  9. Preheat oven to 350º F
  10. To create sandwiches: Place 2 waffles on a baking sheet.
  11. Spread a bit of the topping on each waffle.
  12. On 1 waffle layer on some cheese.
  13. Add some slices of apple.
  14. Add some slices of ham.
  15. Add another layer of cheese.
  16. Top with the other waffle (mustard side down).
  17. Do this to create the remaining sandwiches.
  18. Place the sandwiches in the oven till the cheese melts.
  19. ENJOY!!
