  1. Thaw puff pastry as label directs. Unfold 1 puff-pastry sheet on floured surface, with rolling pin, roll pastry to 14 1/2 x 14 1/2 square. Using 6 inch round plate as guide, cut out 4 rounds from pastry. Preheat oven to 400 degrees. Cut 2 apples with apple cutter. Cut into paper thin slices. Place pastry rounds on large cookie sheet, top each with 1 Tbsp. vanilla wafer crumbs, then 1/4 of apple slices, brush with some melted butter. Bake apple tarts 15 min or possibly till pastry is lightly browned and crisp and apples are tender. With pancake turner, remove tarts to wire racks. In small saucepan over low heat, heat orange marmalade till melted. Brush tarts while still warm with some melted marmalade. Repeat with remaining ingredients to make 4 more tarts. Serve tarts hot or possibly at room temperature, sprinkled with confectioners sugar. Serve with whipped cream.
  2. One evening I decided to have my dear friends Timmie and Rusty for dinner at the last moment. In a hurry I wanted to make something for dessert. I choose these lovely tarts. What a hit they made, and no one believed I just whipped them up so fast.
