%20blogging%20days,%20and%20you,%20my%20readers.%20%20My%20match%20today%20is%20someone%20I%20have%20known%20from%20the%20beginning%20of%20our%20blogging%20days.%20%20She%20may%20not%20realize%20what%20she%20means%20to%20me.%20%20But%20today,%20she%20will%20know.%3C/p%3E%3Cp%3EToday,%20I%20want%20everyone%20to%20know%20that%20our%20blog%20friends,%20our%20internet%20friends,%20those%20people%20we%20never%20may%20meet%20but%20get%20to%20know%20so%20personally%20from%20our%20blogs%20really%20do%20mean%20something%20to%20me.%20%20Maybe%20more%20than%20any%20of%20us%20realize.%20%20It%20took%20the%20loss%20of%20Elle,%20from%20Elle's%20New%20England%20Kitchen,%20this%20last%20week%20to%20make%20me%20put%20this%20to%20words.%20%20Elle%20probably%20didn't%20realize%20she%20had%20a%20special%20spot%20in%20my%20heart,%20but%20she%20did.%20%20One%20of%20her%20recipes%20was%20one%20of%20the%20first%20ones%20I%20posted%20in%20my%20first%20year%20of%20blogging%20and%20that%20was%20the%20beginning%20of%20our%20foodie%20relationship.%20%20She%20will%20be%20greatly%20missed%20in%20the%20world%20of%20bloggers.%3C/p%3E%3Cp%3EI%20became%20very%20emotional%20when%20I%20had%20to%20go%20back%20to%20Holly's%20blog%20to%20decide%20what%20recipe%20of%20hers%20I%20was%20going%20to%20make%20for%20SRC.%20%20Holly%20may%20not%20know%20this,%20but%20I%20admire%20her.%20%20Her%20reasons%20for%20blogging%20to%20start%20with,%20her%20earlier%20insecurities%20about%20what%20she%20was%20doing%20when%20beginning%20blogging,%20just%20gives%20me%20even%20more%20reason%20to%20be%20so%20proud%20of%20her.%20%20How%20do%20I%20see%20Holly?%20%20I%20see%20her%20as%20a%20strong,%20loving,%20caring%20mom.%20%20One%20who%20takes%20the%20time%20to%20spend%20with%20her%20children%20and%20loving%20them%20and%20relishing%20moments%20that%20will%20be%20in%20the%20past%20way%20too%20soon.%20%20I%20see%20her%20as%20an%20amazing%20cook%20and%20baker.%20%20We%20participated%20in%20TWD%20together%20for%20a%20long%20time.%20%20That%20is%20how%20I%20basically%20%22met%22%20and%20%22became%20acquainted%22%20with%20her.%20%20%20She%20really%20is%20a%20PheMOMenon.%3C/p%3E%3Cp%3EI%20really%20love%20these%20Beignets%20I%20made%20from%20her%20blog.%20%20I%20don't%20take%20to%20deep%20frying%20very%20often%20because%20I%20just%20don't%20like%20the%20mess.%20%20But,%20when%20I%20saw%20these%20Beignets%20and%20how%20lovely%20she%20had%20photographed%20them,%20I%20knew%20it%20was%20what%20I%20had%20to%20make.%20%20I%20love%20the%20lightness%20of%20the%20yeasty%20dough,%20and%20the%20vanilla%20heat%20that%20came%20from%20my%20International%20Delight%20Vanilla%20Heat%20creamer!%20I%20love%20the%20taste%20of%20the%20creamer,%20but%20I%20realized%20on%20my%20first%20cup%20of%20coffee,%20that%20I%20didn't%20care%20for%20it%20in%20my%20cup.%20%20So,%20when%20I%20read%20the%20ingredient%20list,%20I%20realized%20I%20could%20sub%20that%20creamer%20for%20the%20half%20and%20half.%20%20There%20is%20just%20the%20slight%20hint%20of%20heat%20in%20the%20after%20taste%20to%20these%20Beignets%20and%20I%20love%20it.%20%20They%20have%20a%20little%20warmness%20of%20cinnamon%20and%20chili.%20%20Two%20things%20I%20absolutely%20love!%20%20The%20powdered%20sugar%20on%20top%20just%20set%20it%20off%20with%20the%20little%20bit%20of%20sweetness.%20%20These%20would%20be%20great%20to%20dip%20in%20a%20hot%20chocolate%20sauce%20too!%20%20Holly%20had%20paired%20hers%20up%20with%20Frozen%20Hot%20Chocolate%20(recipe%20on%20the%20same%20page%20as%20her%20Beignet%20recipe).%20%20I%20am%20not%20a%20huge%20chocolate%20drinker,%20but%20I'm%20a%20dipper!%20Come%20to%20think%20of%20it,%20these%20would%20be%20excellent%20with%20a%20side%20of%20pure%20maple%20syrup%20to%20dip%20them%20in%20also!%3C/p%3E%3Cp%3EOne%20more%20thing%20before%20you%20get%20to%20the%20recipe%20and%20the%20links%20to%20other%20SRC%20posts%20for%20this%20week.%20%20My%20mom%20taught%20me%20to%20drain%20my%20fried%20doughnuts%20on%20a%20paper%20grocery%20bag.%20%20They%20aren't%20as%20popular%20as%20they%20used%20to%20be%20(although%20I%20think%20they%20should%20be)%20but%20I%20get%20them%20when%20I%20go%20to%20Trader%20Joe's.%20%20The%20bag%20soaks%20the%20grease%20on%20the%20fried%20dough%20away%20from%20the%20doughnuts%20-%20and%20this%20really%20does%20help!%20%20My%20Beignets%20were%20not%20greasy%20in%20any%20way.%20%20They%20were%20absolutely%20delicious.%20%20Thank's%20Holly.%20%20For%20being%20an%20inspiration%20to%20mom's%20out%20there%20(young%20like%20you%20and%20old%20like%20me!)%20and%20for%20giving%20me%20a%20recipe%20for%20something%20I%20had%20never%20made%20before!%3C/p%3E%3Cp%3EVanilla%20Heat%20Beignets%3C/p%3E%3Cp%3Erecipe%20slightly%20adapted%20from%20Phemomenon%3C/p%3E%3Cp%3EIn%20bowl%20of%20kitchen%20aid%20mixer,%20add%20warm%20water,%20warmed%20creamer,%20yeast,%20sugar,%20vanilla,%20melted%20butter,%20salt%20and%20egg.%20%20Turn%20mixer%20on%20low%20to%20combine.%3C/p%3E%3Cp%3EAdd%20flour,%201%20cup%20at%20a%20time%20and%20mix%20on%20low%20until%20all%203%20cups%20have%20been%20incorporated.%3C/p%3E%3Cp%3EAt%20this%20point%20in%20time%20I%20put%20my%20oil%20on%20the%20stove%20and%20turned%20it%20on%20to%20medium%20heat.%20%20I%20used%20a%20heavy%20aluminum%20pot%20with%20about%202%20inches%20of%20oil.%3C/p%3E%3Cp%3ERemove%20dough%20from%20bowl%20and%20place%20on%20lightly%20floured%20board.%20Knead%20slightly%20and%20then%20roll%20out%20with%20a%20rolling%20pin%20until%20about%201/8%20inch%20thick.%20(I%20did%20not%20measure%20this%20and%20its%20highly%20likely%20mine%20were%20thicker%20than%201/8th%20inch!).%20%20I%20do%20not%20have%20a%20pastry%20roller%20but%20Holly%20said%20you%20could%20use%20a%20pizza%20cutter%20and%20it%20worked%20great%20-%20cut%20the%20dough%20into%20squares%20about%202x2.%20%20I%20had%20a%20few%20odd%20shaped%20ones%20-%20I%20just%20ate%20those%20as%20they%20came%20out.%20%20;)%20Stretch%20each%20piece%20slightly%20before%20placing%20in%20hot%20oil%20(should%20be%20at%20350%20degrees%20using%20a%20candy%20thermometer).%3C/p%3E%3Cp%3EWhen%20oil%20is%20up%20to%20temperature,%20stretch%20each%20beignet%20slightly%20and%20gently%20place%20in%20hot%20oil.%20%20Cook%20in%20oil,%20turning%20often,%20until%20beignets%20are%20golden%20brown.%20%20Remove%20from%20hot%20oil%20and%20drain%20on%20paper%20bag%20lined%20cookie%20sheet%20(or%20use%20paper%20towels%20if%20you%20don't%20have%20a%20bag).%20%20Sprinkle%20with%20sugar,%20or%20leave%20un-frosted%20and%20dip%20into%20your%20favorite%20sauces%20such%20as%20caramel,%20chocolate,%20or%20maple!%20%20Store%20leftovers%20in%20airtight%20bag.%3C/p%3E){kind=link}
