Tuscan Stuffed Pork Tenderloin Recipe

Ingredients

  • 1 ½ – 2 lbs Pork Tenderloin
  • ¼ cup fresh rosemary, finely chopped
  • ¼ cup fresh Italian parsley, finely chopped
  • 2 tablespoons finely chopped fresh sage or oregano
  • 3 cloves garlic minced
  • Pinch of red pepper flakes or cayenne (optional)
  • ½ cup dry white wine or chicken broth
  • Extra virgin olive oil
  • Salt and Pepper
  • Kitchen twine
  • Quick Tomato Sauce (recipe follows)
  • Garnish with chopped Italian parsley and grated parmesan
  • Serve with Gnocchi, pasta or creamy polenta and an Arugula and White Bean Salad
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, finely diced
