Ingredients
- 1 pkt fresh cheese-filled tortellini - (9 ounce)
- 1 can artichoke hearts - (7 ounce) liquid removed, and
- Â Â cut into quarters
- 1 can sliced black olives
- 10 x cherry tomatoes halved
- 1 sm zucchini sliced and halved
- 1 sm can sliced mushrooms liquid removed
- 1 lb shrimp cooked, peeled,
- Â Â and deveined
- 1/2 bn watercress minced
- 5 ounce fresh spinach - (to 6 ounce)
- Â Â Sliced avocado for garnish
- 3/4 c. extra virgin olive oil
- 1/4 c. apple cider vinegar
- 1/4 tsp dry tarragon leaves
- 1 x garlic clove chopped
- Â Â Salt to taste
- Â Â Freshly-cracked black pepper to taste
Directions
- For the Italian Herb Dressing: Mix ingredients together well. Season with salt and cracked black pepper to taste.
- Cook toretellini according to package. Drain.
- In a large bowl, gently toss together all ingredients except cheese and avocado. Sprinkle with cheese and top with slices of avocado if you like. Serve with Italian Herb Dressing.
