Thumbprint cookies Recipe

I found this little recipe in a magazine I was reading and wanted to give it a try. These are wonderful little cookies. I want to try them with other fillings also, cant wait to do it with chocolate!!

Ingredients

  • 2 cups sifted flour
  • 1/2 tsp salt
  • 1 cup butter
  • 1/2 superfine sugar
  • 2 tsp vanilla extract (or use 1 1/2 have vailla and 1/2 almond extract)
  • choose you filling or jam (strawberry was my first try)
  • 1/2 cup sifted confectioners sugar

Directions

  1. sift together flour and salt, set aside
  2. cream butter and sugar together until light and fluffy, add extracts
  3. slowly mix flour, 1/2 cup at a time until blended
  4. chill dough for 1 to 2 hours
  5. preheat oven to 325 degrees meanwhile quickly shape dough into 1 inch balls, and space them 2 inches apart on ungreased baking sheet. make deep thumbprint in the center of each, fill with preferred jam or chocolate
  6. bake for 15 minutes or until cookies are the color of pale sand
  7. transfer to wire cooling rack
  8. when cooled dust with confectioners sugar
  9. you can pack in tin cans for gifts if doing this for the holidays
