  • 3 c. Cooked Basmati Rice
  • 10 ounce Thawed Kernel Corn
  • 1 cl Garlic, minced
  • 1/3 c. Sliced Green Onion
  • 1 1/2 c. Lowfat milk
  • 1 tsp Chili Pwdr
  • 1/2 tsp Tabasco Sauce
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 c. Shredded Sharp Cheddar
  • 1 lrg Tomato, thinly sliced

Directions

  1. Preheat oven to 350F degrees. Grease a 2-qt casserole.
  2. Mix together rice, corn, garlic, green onion, lowfat milk, chili pwdr, Tabasco sauce, salt, pepper, and 1 1/2 c. of the cheese. Pour into casserole.
  3. Arrange tomato slices on top, overlapping slightly.
  4. Bake till heated through, 35 to 40 min. Sprinkle with remaining 1/2 c. cheese for last 5 min of cooking. Let casserole stand for 10 min before serving.
