There isn't a side dish that offers a fresher taste than tabouli. The lemon, the parsley...they clean your mouth with garden fresh flavors. Healthy, filling and such a reward to have next to your favorite entree.

  • ■1/4 cup fresh chopped mint
  • ■1/2 cup lemon juice
  • ■1/4 cup olive oil
  • ■2 tsp fresh ground sea salt

  • ■*garlic if you want but I didn’t add it this time.

Directions

  1. In a saucepan, bring the water to a boil and add bulgur.
  2. Boil for 1 minute then turn off heat, cover and let steam for 5 minutes or until water is absorbed.
  3. Uncover and allow to cool.
  4. In a medium bowl, add the parsley, celery, tomatoes, mint, lemon juice, oil, salt and pepper.
  5. Toss to coat.
  6. Stir in the cooled bulgur.
  7. Garnish with fresh mint and a lemon slice.

This is a delicious salad. Love the freshness and the fact that it can be made GF by subbing in quinoa for the bulgur.
    I've cooked/tasted this recipe!
