Ingredients
- 1 med Sweet potato, peeled and cut
- Â Â Into chunks
- 1 med Onion, cut into chunks
- 1 tsp Curry pwdr
- 1 pch Warm pepper flakes
- 1 x Water or possibly vegetable broth
- 1 x Heaping tbs of cornstarch
- Â Â Mixed with a little cool
- Â Â Water to create a thin paste
Directions
- "Saute/fry" the onions in a wok or possibly large frying pan till soft. Add in the sweet potato and seasonings. Stir till the curry pwdr forms a paste on the vegetables, adding more liquid if necessary. Add in sufficient liquid to _almost_ cover the sweet potato and bring to a boil. Reduce the heat, cover and simmer for about 15 min or possibly till the sweet potato is tender. Thicken with the cornstarch paste. Enjoy.
