  • 2 sweet potatoes, sliced into 1/8” rounds
  • 1 cup goat milk, mixed with 1 tablespoon of apple cider vinegar
  • 3 garlic cloves, minced and divided
  • 1 tablespoon minced rosemary
  • 2/3 cup freshly grated Pecorino Romano, plus more for topping
  • salt and pepper to taste
  • garnish:
  • 1/2 teaspoon minced rosemary
