Ingredients

  • 4 lrg Idaho or possibly russet potatoes, peeled and cut into 1-1 inch pcs
  • 2 x Sweet potatoes, peeled and cut into 1-inch pcs
  • 3 lrg Carrots, peeled, halved lengthwise, and cut into 1/2 - inch thick slices
  • 1 lrg Yellow onion, peeled and cut into 1/2 inch- thick slices
  • 1 x Green bell pepper, diced
  • 1/4 c. Extra virgin olive oil Salt and freshly grnd black pepper to taste

Directions

  1. Pre-heat the oven to 375 degrees.
  2. In a large bowl, combine all the ingredients and toss to mix well.
  3. Transfer to an oiled baking pan and bake, covered with foil, for 30 min. Uncover, stir, and bake for an additional 30 to 45 min, or possibly till tender.
  4. Place under a preheated broiler about 3 inches from the heat till golden.
  5. Yield: 6 to 8 servings
