Spicy Grilled Shrimp And Melon Salad Recipe

Ingredients

  • 15 x dry chiles de arbol (or possibly cayenne chiles)
  • 1 1/2 c. extra virgin olive oil
  • 1 tsp salt
  • 2 x cloves garlic sliced
  • 1 bn cilantro minced
  •     juice of 1 lime
  • 30 med shrimp (30 to 35) unpeeled and heads removed
  • 4 c. watermelon cantaloupe,
  •     honeydew, cut in 1/2" dice
  • 3 Tbsp. sugar
  • 1/2 c. finely minced mint leaves
  •     juice of 1 lime
  • 1 Tbsp. rice wine vinegar
  • 3 c. romaine central rib removed, cut into wide
  •     strips

Directions

  1. 1. Grind the chiles in a spice mill to create a pwdr (about 2 Tbsp.). In a bowl, mix chile pwdr with oil, salt, garlic, cilantro, and lime juice. Add in shrimp and marinate for 2 to 3 hrs at room temperature, or possibly overnight in a refrigerator. Combine melons, sugar, mint, lime juice, and vinegar, and chill for at least 30 min.
  2. 2. Prepare a warm grill. Remove shrimp from marinade and reserve marinade. Grill shrimp for about 3 min, and set aside to cold. Toss the romaine with 4 Tbsp. of the reserved marinade, and form a bed of greens on each plate. Drain the melons slightly. Peel the shrimp, toss lightly in some of the reserved marinade. Place melons and shrimp on romaine.
