,%20mix%20together%20the%20ketchup%20and%20water.%3C/p%3E%3Cp%3EPour%20ketchup/water%20mixture%20over%20the%20chicken%20and%20vegetables.%3C/p%3E%3Cp%3EBring%20to%20boil%20over%20medium-high%20heat.%3C/p%3E%3Cp%3EAfter%2010%20minutes,%20reduce%20heat%20to%20low%20and%20cover.%3C/p%3E%3Cp%3EAllow%20to%20simmer%20until%20chicken%20starts%20to%20pull%20away%20from%20the%20bone%20easily.%20%20(about%20an%20hour?)%3C/p%3E%3Cp%3EWith%20tongs%20or%20a%20slotted%20spoon,%20remove%20chicken%20from%20the%20pot%20and%20put%20into%20a%20bowl.%3C/p%3E%3Cp%3EOnce%20it's%20cool%20enough%20to%20handle,%20start%20removing%20the%20meat%20from%20the%20bones%20in%20large%20chunks.%3C/p%3E%3Cp%3EWhen%20finished,%20shred%20slightly.%20%20Not%20too%20much,%20they'll%20still%20break%20down%20while%20cooking%20further.%3C/p%3E%3Cp%3EThis%20is%20a%20good%20time%20to%20taste%20the%20sauce%20and%20adjust%20to%20your%20liking.%3C/p%3E%3Cp%3EAdd%20chicken%20back%20to%20the%20sauce%20and%20continue%20to%20simmer,%20covered%20for%20another%20couple%20of%20hours.%3C/p%3E%3Cp%3EServe%20over%20rice,%20noodles%20or%20potatoes.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3EMom%20usually%20made%20Spanish%20Chicken%20using%20legs%20and%20thighs.%20%20We%20prefer%20the%20chicken%20breasts.%3C/p%3E%3Cp%3EDon't%20be%20tempted%20to%20use%20boneless%20chicken%20breasts.%20%20You%20need%20the%20flavor%20from%20those%20bones%20to%20mix%20with%20the%20ketchup%20and%20water.%20%20Trust%20me!%20%20A%20few%20years%20ago,%20Joe%20kept%20insisting%20that%20this%20would%20be%20so%20much%20easier%20(and%20better)%20using%20boneless%20chicken.%20%20I%20kept%20telling%20him%20no,%20but%20gave%20in%20and%20made%20it%20without%20the%20bones.%20%20It%20was%20good,%20but%20he%20did%20admit%20that%20it's%20much%20better%20with%20the%20bone-in%20chicken.%3C/p%3E%3Cp%3EYou%20could%20certainly%20skip%20picking%20the%20chicken%20from%20the%20bones,%20if%20you%20like.%20%20But%20I%20prefer%20to%20remove%20the%20bones,%20since%20as%20it%20cooks%20further,%20the%20chicken%20starts%20to%20fall%20apart%20making%20it%20more%20difficult%20to%20fish%20the%20bones%20out!%3C/p%3E%3Cp%3EDon't%20forget%20to%20taste%20the%20sauce%20before%20you%20add%20the%20cooked%20chicken%20back%20to%20the%20pot.%20%20And%20adjust%20the%20seasoning%20as%20needed.%20%20I%20originally%20started%20with%202%20cups%20of%20ketchup%20but%20after%20tasting%20it,%20I%20realized%20it%20needed%20a%20bit%20more.%3C/p%3E%3Cp%3EI%20usually%20add%20a%20bay%20leaf%20and%20some%20sun-dried%20tomatoes%20to%20the%20pot,%20but%20we%20were%20all%20out%20of%20both%20this%20time.%3C/p%3E%3Cp%3EThis%20is%20a%20good%20clean%20out%20the%20fridge%20recipe.%20%20In%20the%20past,%20I've%20added%20half%20a%20can%20of%20diced%20tomatoes%20that%20were%20left%20from%20another%20recipe.%20Or%20a%20couple%20tablespoons%20of%20tomato%20paste%20that%20was%20left%20in%20the%20fridge.%20%20Add%20what%20you%20like.%3C/p%3E%3Cp%3EMom%20always%20served%20this%20with%20potatoes.%20%20Either%20mashed%20or%20buttered.%20%20That's%20the%20way%20I%20like%20it.%20%20Joe%20prefers%20this%20with%20rice.%20%20So,%20I%20usually%20make%20both.%20%20I%20was%20short%20on%20time%20so%20I%20only%20made%20rice%20this%20time.%20%20We're%20having%20the%20leftovers%20tonight,%20so%20I'll%20be%20making%20it%20with%20potatoes.%20:)%3C/p%3E%3Cp%3EI'm%20sharing%20this%20recipe%20with%20the%20following%20blog%20carnivals:%3C/p%3E){kind=link}
