Ingredients
- 2 c. grated carrots
- 2 c. grated apples
- 1/4 c. lemon juice
- 1 tsp salt
- 1 tsp chopped garlic
- 1 tsp chopped ginger
- 1 Tbsp. sugar
- 1/4 c. rice wine vinegar
- 1Â 1/2 tsp minced fresh red chilies
- Â Â Freshly-grnd black pepper to taste
- 1/4 c. minced cilantro
Directions
- Toss carrots and apples with lemon juice and 1 tsp. salt, let sit 1/2 hour, then squeeze with hands and throw away any excess liquid.
- Combine with remaining ingredients and mix well. Allow to sit refrigerated for several hrs before serving.
