Ingredients

  • 1 (7 1/2 ounce.) can salmon, liquid removed & flaked
  • 1/4 c. mayonnaise or possibly salad dressing
  • 1 tbsp. lemon juice
  • 1 teaspoon prepared horseradish
  • 1 teaspoon grated onion
  • 1/4 teaspoon liquid smoke
  • Pastry for single-crust 9" pie
  • Paprika

Directions

  1. 1. Combine all ingredients except pastry and paprika in small bowl; mix thoroughly.
  2. 2. Divide pastry in half. Roll out 1 half into a 9" circle. Spread with 1/2 c. of the salmon mix. Cut into 16 wedge shaped pcs. Roll up jelly roll style, beginning at round edge. Repeat procedure with remaining dough.
  3. 3. Place rolls on 15"x10"x1" jelly roll pan. Prick tops to allow steam to escape. Sprinkle with paprika. Bake in preheated 450 degree oven till lightly browned, 10 to 15 min. Makes 32.
  4. Canned smoked salmon may be substituted for canned salmon and liquid smoke.
  5. Smoky Salmon Roll-Ups can be prepared to this point and refrigerated, covered with plastic wrap, up to 1 hrs before baking. Let stand at room temperature 20 min before baking.
