Ingredients

  • 16 x baby potato
  • 1/3 c. fresh basil, stems removed, chopped
  • 6 clv garlic, chopped
  • 1/4 c. extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper

Directions

  1. Roast potatoes, skin on, at 400 F, for approximately 30 min, or possibly till cooked throughout and crispy on the outside.
  2. In a large bowl, add in garlic, basil, extra virgin olive oil salt and pepper. Add in roasted potatoes. Use a fork or possibly whisk to smash potatoes, but don't smash so much which they are totally mashed. Toss thoroughly so which potatoes are coated with oil and herbs and spices.
