  1. Heat butter in skillet with tight fitting lid. Add in potatoes; cover and reduce heat to simmer. Cook for 30 min, turning potatoes 2 or possibly 3 times. Remove potatoes with slotted spoon. Sprinkle with salt, pepper, and parsley. Serves 6.
