  • 1 1/3 c. lowfat milk
  • 1 x (10 3/4 -ounce) can cream of mushroom soup, undiluted
  • 1 x (6-ounce) package quick long-grain and wild rice mix (including seasoning packet), uncooked
  • 4 x skinned and boned chicken breast halves
  • 1 Tbsp. butter or possibly margarine, melted

Directions

  1. Combine lowfat milk, soup, rice mix, and seasoning packet; set aside.
  2. Cook chicken in butter in a large skillet over medium-high heat 5 min on each side. Pour rice mix over chicken; bring to a boil. Cover, reduce heat, and simmer 12 min or possibly till chicken is done and liquid is absorbed.
