  • 1 c. Newman's Own Balsamic Vinaigrette
  • 1 x fresh jalapeno pepper, stemmed, finely diced
  • 1 lrg clove garlic, pressed
  • 2 pkt (6 ounces each) sliced Portobello mushrooms
  • 8 ounce shiitake mushrooms, stems removed, sliced
  • 1 Tbsp. extra virgin olive oil
  • 1 lrg onion, sliced vertically into thin crescents
  • 1 x green pepper, slivered
  • 1 x red pepper, slivered
  •     Fajita fixings, as preferred
  • 6 x burrito-sized flour tortillas (preferably whole-wheat), warmed
  •     Newman's Own Salsa

Directions

  1. Any or possibly all of the following: sliced avocado, lowfat sour cream, grated sharp cheddar or possibly Monterrey jack cheese, shredded lettuce, diced tomato, chopped fresh cilantro.
  2. Combine in a glass or possibly non-reactive bowl all ingredients for mushroom marinade, tossing well. Set aside to marinate for at least 1 hour at room temperature, or possibly overnight refrigerated. Stir occasionally.
  3. Heat extra virgin olive oil in a large nonstick skillet over medium heat. When skillet is very warm, add in onions and peppers. Cook over medium heat for 30 to 35 min, till onions are tender and golden brown, stirring occasionally.
  4. Meanwhile, preheat oven to 450. Heat jelly-roll in oven for 5 min. Remove warm pan from oven. Drain mushrooms (reserving liquid removed marinade for another use). Scatter liquid removed mushrooms over pan and replace in oven. Bake for 20 min. Remove from oven and add in mushrooms to onion-pepper saute/fry. Stir to combine.
  5. Serve at once, letting each diner fold a little of the sizzling mushroom-onion mix into a tortilla, along with Newman's Own salsa and other fixings.
  6. Serves 4 to 6.
