- Warm Milk: 1/4 cup
- Chopped Almonds, Pistachio: 2tsp
- Cardamom powder: a pinch
- Oil/Ghee: for frying
- For syrup:
- Water: 1cup
- Sugar: 2 cup
- Cardamom: 1/2tsp
- Saffron: a pinch
- Rose Water: 2-3 drops

%20and%20hindustani%20word%20called%20jaman,%20a%20south%20asian%20fruit%20with%20a%20similar%20size%20and%20shape.%20(source:%20wikipedia).%3C/p%3E%3Cp%3EThis%20time%20I%20have%20prepared%20them%20for%20the%20festival%20of%20Shiva-ratri,%20coming%20up%20on%202nd%20of%20March.%20%20Traditionally%20these%20are%20made%20of%20dough%20consisting%20of%20milk%20solids%20or%20%20khoa%20(caramelized%20reduced%20milk)%20and%20rolled%20into%20a%20ball%20together%20with%20some%20flour%20and%20deep%20fried%20in%20pure%20desi%20ghee.%20The%20balls%20are%20then%20soaked%20in%20sugar%20syrup%20flavored%20with%20cardamom,%20saffron%20and%20rose%20water.%3C/p%3E%3Cp%3EFor%20the%20ease%20of%20making%20it,%20I%20used%20the%20instant%20gulab%20jamun%20mix%20by%20Gits.%20Its%20preferable%20to%20use%20the%20shahi%20mix%20but%20if%20its%20not%20available,%20then%20you%20can%20do%20the%20way%20I%20did,%20make%20it%20shahi%20(Royal)%20at%20home.%20According%20to%20the%20instructions%20at%20the%20back%20of%20the%20pack,%20water%20is%20used%20to%20roll%20in%20to%20balls.%20But%20I%20replaced%20water%20with%20the%20milk,%20add%20chopped%20nuts%20in%20the%20center%20of%20the%20balls%20and%20added%20cardamom%20and%20saffron%20to%20the%20syrup.%20In%20couple%20of%20minutes%20the%20sweet%20carmalized%20dumplings%20were%20ready%20to%20be%20relished.%3C/p%3E%3Cp%3EIngredients%20for%20Gulab%20Jamuns%20:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ETake%20gulab%20jamun%20mix%20in%20a%20bowl.%3C/p%3E%3Cp%3EAdd%20some%20warm%20milk%20instead%20of%20water%20to%20make%20the%20dough.%3C/p%3E%3Cp%3EGently%20knead%20the%20dough%20and%20set%20%20it%20aside%20for%2010%20minutes.%3C/p%3E%3Cp%3EAdd%20finely%20some%20chopped%20almonds,%20pistachio%20in%20the%20dough%20and%20roll%20it%20into%20small%20balls.%3C/p%3E%3Cp%3EMake%20sure%20there%20are%20no%20cracks%20in%20the%20balls,%20so%20fix%20if%20any%20by%20dabbing%20little%20oil%20on%20your%20fingers.%3C/p%3E%3Cp%3EI%20prefer%20to%20make%20small%20balls,%20for%20even%20cooking%20of%20jamuns%20from%20inside%20out%20and%20kids%20love%20the%20size.%3C/p%3E%3Cp%3EPrepare%20the%20syrup%20in%20a%20pan,%20by%20boiling%20%20-%20water,%20sugar,%20saffron,%20rose%20water%20and%20cardamom%20for%20enhanced%20flavor.%3C/p%3E%3Cp%3EHeat%20ghee/oil%20in%20a%20deep%20skillet.%20I%20used%20canola%20oil%20%20and%20fry%20the%20jamuns%20on%20low%20heat%20till%20it%20turns%20dark%20brown.%3C/p%3E%3Cp%3ETake%20out%20the%20jamuns%20on%20the%20paper%20towel%20%20and%20soak%20them%20in%20sugar%20syrup.%3C/p%3E%3Cp%3ELeave%20for%20a%20few%20hours,%20preferable%20overnight.%3C/p%3E%3Cp%3EThe%20gulab%20jamuns%20can%20be%20either%20served%20at%20room%20temperature%20or%20a%20little%20warm.%3C/p%3E%3Cp%3ECan%20be%20warmed%20%20in%20a%20microwave%20for%2010%20seconds%20just%20before%20serving.%3C/p%3E%3Cp%3ECan't%20beat%20the%20feeling,%20warm%20thin%20caramelized%20crust%20outside%20&%20sweet%20and%20soft%20from%20%20inside.%3C/p%3E%3Cp%3EI%20like%20to%20top%20up%20the%20gulab%20jamuns%20with%20pistachio%20just%20before%20serving%20and%20with%20a%20scoop%20of%20vanilla%20ice%20cream.%3C/p%3E%3Cp%3EWhat%20say%20?%20-%20%22Deadly%20Combo%22%20and%20I%20simply%20love%20to%20have%20%20hot%20jamuns%20with%20chilled%20ice%20cream...!%3C/p%3E%3Cp%3EYumm...yumm%20my%20little%20one%20is%20loving%20it%20and%20hope%20you%20love%20it%20too%20!!!!!!!!%3C/p%3E){kind=link}
