Directions

  1. Cook whole zucchini in boiling, salted water till tender, about 7 to 10 min. Cut each zucchini in half lengthwise. Scoop out interior of squash and mash.
  2. Brown sausage and onion in a heavy pan. Stir in mashed zucchini. Add in remaining ingredients except for paprika and 2 Tbsp. of Parmesan cheese. Mix well. Spoon into zucchini shells. Place shells in a shallow baking dish. Sprinkle Parmesan cheese and paprika on top of each squash. Bake at 350 degrees for 25 to 30 min. Serves 4 to 8.
