Ingredients

  • 4 cups sweet or glutinous rice flour
  • 1 1/2 cups sugar
  • 2 cups coconut milk
  • 1/2 tsp ube flavor
  • 1-2 drops of ube or purple food color
  • 3/4 tsp lye water
  • 1/3 tsp annatto powder

Directions

  1. Mix first three ingredients together. Divide mixture into three. The first part will remain white, the 2nd part mix some ube flavor for the purple part, for the third part add lye water and annatto, this will turn the mixture yellow.
  2. In pan (grease with non-stick spray or brush with oil), pour in the white mixture. Steam for 10 minutes. Add in the ube mixture, steam another 10 minutes. Then finally, add the yellow mixture and steam for 10 minutes. Total steaming time is 30 minutes.
  3. Top with latik, (coconut milk heated till it curdles and turns brown).
