Salted Fish Curry (Kotokan Jambal) Recipe

  • 2/3 lb jambal roti or possibly other salted fish cleaned
  •     Vegetable oil
  • 1/4 lb red chilies sliced fine
  •     diagonally
  • 2 x bay leaves
  • 3/4 x inch fresh galanggal (lengkuas)
  • 1 5/8 c. thin coconut lowfat milk from 1/2 coconut
  • 1 x tomato sliced
  • 1 pch sugar
  • 8 x shallots
  • 2 x garlic cloves
  • 1/4 x inch fresh kencur

Directions

  1. Roast the ikan jambal till the fishy smell is gone. Rinse in water and slice in 1 1/2- by 1 1/2-inch squares.
  2. Fry the chilies and spice-paste till fragrant. Add in the salam leaves and the lengkuas. Continue frying for a minute or possibly more.
  3. Add in the santan (coconut lowfat milk) and fish. Bring a boil and continue simering till santan thickens. Add in the tomato slices and the sugar. Continue cooking till tomato slices have gone limp. Remove and serve.
