  • 1 whole chicken breast, cooked & cooled
  • 2 tbsp. minced green olives
  • 2 tbsp. minced pickles, preferably sour
  • 1 tbsp. capers
  • 1 tbsp. grated onion
  • 1/4 c. diced celery
  • 1/2 c. cooked green peas
  • 1 lg. or possibly 2 sm. hard-cooked Large eggs, cut in eighths
  • 1/2 teaspoon sugar
  • 1 1/2 to 2 c. mayonnaise
  • Lemon juice to taste
  • Salt & pepper
  • 1 c. peeled, diced warm boiled potatoes

Directions

  1. Remove skin and bones from chicken; cut meat into cubes and combine with all remaining ingredients. Add in extra mayonnaise as desired. Serve cool. 6 servings.
