Ingredients
- 1 pound grnd beef
- 2 onions, minced
- 2 tbsp. salad oil
- 1 c. grated Cheddar cheese
- 1 (8 ounce.) can tomato sauce
- 1 (6 ounce.) can tomato paste
- 1/4 teaspoon pepper
- 4 med. zucchini, sliced cross-wise, 1/4 inch thick
- 1 green onion, minced
- 1 bell pepper, minced
- 1 teaspoon salt
- 1 (10 ounce.) can Ro-Tel tomatoes and green chilies
- 1/2 teaspoon oregano
- 1/4 teaspoon garlic salt
- 1/2 c. grated Parmesan cheese
Directions
- Saute/fry grnd beef, bell pepper and onion in oil till meat is brown and crumbly. Add in Ro-Tel tomatoes and green chilies, tomato sauce, and tomato paste. Simmer for 10 min stirring occasionally. Blend in Cheddar cheese, oregano, salt, pepper and garlic salt. Add in zucchini. Simmer another 10 min. Put into an ungreased shallow 3 qt casserole and sprinkle with Parmesan cheese. Bake at 350 degrees for 45 min. Serves 6-8.
